Since 1995, YAMASAN has been delivering carefully selected traditional Japanese foods such as miso, soy sauce, and tea to customers around the world. Inspired by the demands of our international customers, we decided to ship our products abroad, allowing people to enjoy Japanese traditional food culture anywhere in the world.
Our dedicated team showcases the essence of Japanese traditions and delivers authentic Japanese cuisine. Our fine miso is slowly aged in a natural wooden barrel for a long period, as the natural phenomena of the wooden barrel's breathability adjusts the inner temperature and maintains an ideal condition for the fermentation process.
Making miso is a simple process, but creating distinctive miso requires great skills and efforts. Our small brewery succeeds in the traditional methods, which require an artisan's keen eyes, nose, and tongue. Without completely relying on machines, our small brewery is adamant about artisanal handworks of succeeded skills. The authentic miso-making process is supervised by a Japanese "Modern Master Craftsman" in Kyoto, where the mecca of Japanese traditional culture is located.
Miso, an integral ingredient of miso soup, has a long history in Japan, dating back to the Asuka period (710-794). In the Kamakura period (1185-1333), a meal style called "Ichiju-ichisai" (One Soup and One Vegetable) became popular in samurai society, and the custom of eating miso soup with every meal was established. From then on, miso soup has become a staple of the Japanese diet.
Our product offerings include Awase Miso Paste, Shinshu Miso Paste, White Miso Paste, Dashi Stock, Double Brewed Soy Sauce, and Koikuchi Soy Sauce. The miso products feature handmade miso made by a craftsman, aged for over a year and manufactured in Kyoto, Japan. The soy sauces are naturally brewed twice, with about double the amount of ingredients and double the time and effort, resulting in a distinctly multiplied umami.
