【About the White Miso】

Shiro-Miso (White Miso) is a sweet rice miso made using rice koji. Unlike other misos, it has a high ratio of rice koji to soybeans, resulting in a shorter maturation period and a lower salt content. Its unique aroma and sweetness enhance the flavor of the ingredients.

【What Sets Shiro-Miso Apart】

Unlike common red miso, Shiro-Miso has a light, white color and a shorter aging period. The difference is further emphasized by its use of rice malt, which gives it its distinctive appearance.

【Rice Koji Intensity】

Shiro-Miso typically features a high percentage of rice koji, but our variant uses twice as much rice koji as soybeans. This ensures a natural and mild sweetness that truly stands out.
